Caribean jerk dust

If you enjoy Caribbean flavors then this is the perfect jerk rub for you. The great mixture of herbs and spices adds a kick to any meat, particularly chicken and pork. Add more sugar if needed to make it sweet and hot. Caribbean jerk is supposed to be hot and sweet.

Prep Time: 10 minutes

Ingredients:

  • 1 tablespoon onion flakes
  • 1 tablespoon onion powder
  • 2 teaspoons ground thyme
  • 2 teaspoons sugar
  • 2 teaspoon dried chives
  • 2 teaspoons salt
  • 1 teaspoon ground allspice
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon

Preparation:

Mix all ingredients together. Store in an airtight container in a cool, dark place. This rub will last several months.

You can use this one as well:

2 tablespoons ground thyme
1 tablespoon ground rosemary
1 tablespoon ground allspice
1 tablespoon ground ginger
1 1/2 tablespoons sea salt
1 1/2 teaspoons onion powder
1 1/2 teaspoons black pepper
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
3/4 teaspoon garlic powder
3/4 teaspoon paprika
2 teaspoons ground cayenne or more for heat
12 bay leaves (finely crumbled) i used basil but in a low amount
1/3 cup sugar
