Roasted chipotle chicken
This is a very interesting recipe for roasted chicken. It uses mayo as the main ingredient for the rub. You roast this bird on the grill using the indirect cooking method. If you are using a charcoal grill, you can use the duct mod to insure that air is ducted towards the coals. You achieve this by wrapping half of the charcoal grate with tin foil. You then place the lit coals on the grate that is not covered by the foil. Dont worry, i have pictures explaining all of this.
Lets start off with the ingredients:
Enough for two 4 pound chickens
1 cup helmans mayo
2tsp ground black pepper
1tsp paprika
1tsp chilie powder
1tsp poultry seasoning
1tsp granulated onion
1tsp granulated garlic
1/2tsp kosher salt

Mix all the above into a bowl and stir well

Rub a whole chicken under and over the skin with this wet rub. Cook indirectly on grill for 1 hour then flip chicken over. Cook another 1.5 hours or until done.

I also sprinkled the chicken with some Mrs dash grilled chicken seasoning for extra flavor. Now its time to put the chicken on the grill with our nifty duct mod.


Roast for about 45 minutes then turn 180 degress to ensure even cooking. Cook till breast reaches 185*F with thermometer.
